SCT: Chicken Tortilla Soup
This is another well-loved recipe that we have fairly regularly. On Monday I bought the canned ingredients at the 99 cents store, used left-over chicken (From Amie’s California Chicken recipe) and stale chips. It only cost me $5 to feed my family!
Ingredients:
- 4 chicken breast halves (I often use left-over chicken of chicken thighs)
- 2 15oz cans of black beans, undrained (or one 28oz can)
- 2 15 oz cans of Mexican stewed tomatoes or Rotel tomatoes
- 1 cup salsa
- 1 4oz can of chopped green chili’s (you can substitute fresh green pepper)
- 1 14.5 oz can of tomato sauce
- tortilla chips
- grated cheese (optional, but delicious)
Directions:
- Combine everything except the chips and the cheese
- Cook on low for 8 hours
- To serve put a handful of chips in each individual soup bowl. Ladle soup over chips and top with cheese

Wow. I was just talking to someone the other day about my sister’s CTS recipe. How it has like 100 different ingredients thus making it a bit expensive. Though it does freeze well. Thanks Ash! I’ll have to try this one.
